Jerk Chicken

Pirates of the Caribbean style Jerk Chicken

Serves 4 people


  • 4 x chicken breasts
For the sauce
  • 1 large onion
  • 1 deseeded chilli
  • 4g ginger
  • 1 sprig of fresh thyme
  • a pinch of black pepper
  • 1 tsp white wine vinegar
  • 1 tsp of light soy sauce


  1. Put all the sauce ingredients into a food processor and blend until smooth.
  2. Brown the chicken in a pan, pour over the sauce and simmer until chicken is tender and cooked all the way through.

Serve with some steamed rice ‘n’ peas and add a pineapple salsa or fresh pineapple wedges on the side.
